Hello all I hope this Recipe brings you close to having all you holiday prep almost done or at least almost done.  I had to go get a mammogram done yesterday and was so exhausted after the appointment I was too tired to get on the computer last night. The appointment was so stressful they had no orders, no appointment for me or anything, the health dept.was closed so they could not even call. Finally someone came from the mammography dept. and knew the health dept. had called because they had not gave me any papers, and my hubby called for me. I have been trying to get this appt. since July!!! Since we fall into the category of no insurance we always get the run around! No joke! We had insurance once for four years and we had a baby (which we had maternity coverage) and the following year our premium went from $650.00 a month to $1,300.00 a month and yeah that was out of the question, and it hardly paid for anything.  Insurance companies are out to make money not spend!! Okay now I vented!! Onto happy things..... We had visited some friends of Bruce after the appt. and stayed longer than expected, his wife Bonnie was such a sweety and a super hostess. She had coffee and cookies waiting and the just a sweet heart, their doggie was such a smarty....had a great time!! We had to rush back, since we were in town I had wanted to stop at Wally World...but that was out of the question. (you know to get more cooky stuff)
In my last post I had told you about hubby getting on board this cooking thing...which was so cute, he decided he would make those famous FRIED OREO'S    I did a quick search and printed the recipe from All Recipes.com and off they were to making them...I was right proud of daddy and they did so well. I have seen these are fairs, and carnivals...but have never tried them. It just sounded too gross but boy was I wrong...they are the devil! OMgosh!! They are Yummy with a capital Y! Never ever expected that!! Now I have a new carny food to purchase...LOL!!!  I feel like the double stuff would work better but when you live in the middle of Nowhere...lol you tend to use what is on hand. Let me know if you try them.
Pizzelles
6 eggs, beaten
3 tsp. of baking powder
1 cup of butter melted
1 3/4 cups of sugar
2 Tablespoons of Vanilla flavoring (you can use lemon, anise, almond)
3 1/2 - 4 cups of flour (all purpose)
1 Tablespoon of vegetable oil
1/4 cup of milk
Powder Sugar for dusting
Mix together all ingredients except the flour and powder sugar.
Using the mixer on medium speed then gradually add the flour sugar and mix well until the mixture is dough like and can be dropped unto greased Pizzelle iron a tablespoon at a time. Usually bake on the iron for 30-40 seconds. They will burn so watch closely. You can use a waffle iron too...they will be thicker. Fun to make!!
This recipe is mine that I had over the years, I used to make them on the waffle iron, then we found a Pizzelle iron at Bed Bath and Beyond using that 20% coupon (sign up for their emails), it was so exciting to finally find one that was not a huge price. They one day coming back from the chiropractor we stopped at this tiny thrift store in the country outside a gas station and still in the box with a $15 tag a Pizzelle iron...I was like yeah!! So when I got to the cashier she said how about $8.00 (I didn't even haggle her) well YES!!!! So now I have two!! The kids love them and they are very light too. Easy for little hands.  Have a wonderful weekend!! Cyber Hugs!! Dawn Gallop
